These tacos are a true labor of love. Making duck confit takes time and patience (but your patience will soooo be rewarded). If time isn’t on your side, prepared duck confit can be found at some upscale grocery stores and online retailers. If you choose to purchase it premade, get about 4 to 5 pounds of it to account for the weight of the bones. Plate these tacos with Spanish-style rice and black beans.

IPA Lemon Bars

The lemon bars I made for you have been in the works for over a year. There have been other recipes in the past that haven’t lives up to my expectations. The filling wasn’t creamy enough, or the crust and filling weren’t distinct layers, or other assorted issues. This recipe finally gave me the results I wanted. A great crust with a slight flakey crispness,not too sweet, and lemony with the right touch of beer flavor.

Cinnamon-dusted Pork Tenderloin with Chocolate Stout Mole

Recipe author Brandon Hernández says the dried fruit, caramel, nutmeg and subtler chocolate notes of abbey dubbels, specifically The Lost Abbey’s Lost and Found Ale, pair exceptionally well with this dish. Another obvious pairing would be the chocolate stout you use to create the mole, which would emphasize the chocolate flavors even more.

They’re called Chuck Norris Duck Wings because they pack a mighty punch and a strong kick. The duck wings are braised with a variety of peppers in Hair of the Dog’s Little Dog Adam, made from second runnings of the wort from Adam. Adam, a re-creation of a historic German beer, has rich flavors of dates, raisins, coffee, and dark chocolate. Little Dog Adam is similar, but the flavors are less intense and the beer contains less alcohol – about 3%.

Sous Vide Beef Cheek Tacos

Epic Eatz’ Beef Cheek Taco is made with Port Brewing’s Board Meeting, a brown ale infused with local San Diego coffee and chocolate nibs from a San Francisco Chocolatier. The beef cheeks are placed in a vacuum-sealed, plastic bag with spices and the Board Meeting, then cooked in a bath of hot water. The meat was finished with a sear on the flattop.

Seasonal craft beer is a great way to bring to life the flavors of the season. Pumpkin ales are an anticipated section of limited release seasonal beers. And while many breweries debate the process of pumpkining their beers, the end results are often well worth the wait to taste what brewers have come up with.

Most pumpkin beers not only carry with them the notes this orange squash has to offer, they also give the flavors of nutmeg, cinnamon and cloves that we have come to so closely associate with the taste of pumpkin.
